Yeringberg Viognier 2021

On the nose, rich exotic aromas of apricot, mango and vanilla come together with elegant, lifted notes of honeysuckle, orange blossom and rosewater. The palate continues the theme, marrying depth, volume and richness, with a structure that offers tension, texture and controlled power.

2021 was a dream vintage for all of our varieties. A cool start with plenty of rain in the spring with flowering enjoying the best of the weather, thus ensuring ideal yields, much better than the tiny 2020 season.

The grapes were handpicked on 3 different dates to achieve a balance between freshness and flavour. The grapes were brought to the winery in the picking buckets and then transferred to the sorting table to remove leaves and any damaged grapes. The bunches were de-stemmed and crushed directly into the press. Pressing was very gentle to minimise phenolic extraction. The juice was settled and racked off solids before wild fermentation in old barrels. It stayed on its lees in the barrels, with some stirring, for about 11 months.
