Tasting Notes
Wonderful perfume of blue fruits, violet, fennel and white pepper. The palate is silky but serious, with an undertow of ferrous complexity and gossamer tannins.
A wine that will drink well now with a 2 hour decant and will develop further nuance and complexity over the next decade or so.
Winemaking Notes
We have three different Shiraz clones in the
vineyard planted in 1999. PT23, 1654 and ‘100 year old’ Each clone has a unique flavourprofile and ripening pattern.
The grapes were very lightly crushed
and fully destemmed. We added about 2.5% Marsanne/Viognier & Roussanne to the ferments. The grapes were pressed after 23 days on skins and then matured in barrel (25% new) for 19 months with several rackingsto clarify & aerate along the way.
